Small Taliouine Saffron Tagine

Picked by hand with meticulous care, and necessarily at dawn before daybreak and before the flower opens, saffron is very difficult to harvest, which explains both its price and its nickname, the red gold of Morocco. It is picked between mid-October and mid-November each year. Combined with honey and applied directly to the mouth, it also soothes toothache.
